Puebla has given us two important Mexican exports: Cinco de Mayo celebrations (which commemorate the date that Mexican troops defeated French forces there in 1862) and mole poblano sauce. ¡Grácias, Puebla! Not surprisingly, eating out is one of the most celebrated activities in this city, but don’t miss the stunning Colonial Spanish architecture, countless museums and beautiful cathedrals. The historic center of the city still contains Spanish Colonial architecture and is a UNESCO World Heritage Site. Puebla sits at 7,000 feet above sea level, making its climate moderate most of the year.
